Food: Afghan Firni (Pudding Dessert)

Maria Aziz, from Young Afghan Leaders, shared this recipe for her Afghan Pudding. This is the recipe she used at the Food Safari - smooth, creamy and easy.

To make it:

Put 2 cups of milk into a saucepan.

Add 1/3 cup sugar

Stir on Medium Heat.

Meanwhile combine 2 level tablespoons of cornflour with 1/3 cup of cold milk.

Pour this slowly into the hot milk whilst whisking.

Stir continuously for 10 minutes, while the sugar dissolves and it bubbles gently.

Then add 1.2 teaspoon of cardamom powder, 1 teaspoon of rose water, and keep stirring for a few minutes more, letting it simmer and cook.

Pour into small dishes, sprinkle with crushed pistachio (and some saffron if you have some)and refrigerate (covered) until chilled before eating.
